Warm SoLun salad




½ kg potato 100g pancetta thinly sliced 1 teaspoon butter 1 SoLun – cheese with olives (mini pack of 270g) 1 small onion 3 tomatoes grappolo 1 yellow pepper ½ cup olive oil 1 teaspoon vinegar 1 teaspoon lemon juice 1 teaspoon mustard ½ teaspoon thymesalt



  1. Wash the potato, cut it in half, season it with salt, drizzle with olive and bake in the oven for about 40 min at 180 ° C.
  2. Cut SoLun cheese into cubes, slice tomatoes, peppers and onions and mix the dressing from olive oil, vinegar, mustard, lemon juice, thyme and salt.
  3. Fry the bacon in butter on a pan.
  4. When baked potatoes settles for a while , mix it with vegetables and cheese in a salad bowl, add bacon and souce from frying and pour the dressing over warm salad and stir gently. Season it with salt if necessary. Serve warm as a complete meal.
