stack of fresh basil (about 2 cups)1 cup of freshly grated cheese Pagus ½ cup extra virgin olive oil 1/3 cup of pine nuts 1 clove of garlic Salt Pepper
- Briefly mix basil and pine nuts in a food processor. Add a clove of garlic and grated cheese Pagus then start mixing again. Scrape down the sides of the food processor with a rubber spatula.
- While the food processor is running, slowly add the olive oil in a steady small stream to produce a smooth emulsion.
- Season with salt and pepper.
- Toss with warm pasta and serve.
